Sunday Baking Day

Tonight for dinner...

is chicken with broccoli, cauliflower and cheese. Beautiful creamy dish!



Cut chicken in to cubes and cook in the frying pan until ready. Cook your cauliflower and broccoli in the boiling water for about 5-7 minutes. In the separate pan melt 50g of butter. When melted add 50g of flour and mix them together until golden, Then slowly add 450ml of milk,cook the souse until it gets creamy. Add chicken, broccoli, cauliflower in to the souse and mix them all together. Then add the mixture in to the oven dish and cover with cheese. bake for about 10-15 min and enjoy!:)

Peanut Butter cookies

On Monday while i was browsing internet in a search of a cute rooms, I've found this recipe for peanut butter cookies, and it sounded so easy, i thought 'i have to try it'! (luckily i had all the ingredients i needed). I have to say this is my favourite treat now! First of all its unbelievably easy to make and second of all they are soooo delicious, me and my hubby just couldn't get enough!!!!

Here is how you make them:
1 cup of Peanut Butter (i used a low fat natural peanut butter to make it a bit healthier)
1 cup of sugar (again i used natural sugar)
1 egg
Mix all the ingredients together, bake for 10 min and enjoy!!!:) (Told you it was easy)

Almond coockies

I made this almond cookies on Friday for the first time ever and was blowing away by how easy it is to make them and how delicious there are! All you need is around 400-500g of Almonds (no skin), plus 150g of sugar (i used less then that) and 1 egg. Crash you almond in the blender, them mix them with sugar and egg and bake in the oven for 15-20 min (180). That's all:) Perfect weekend treat!
P.S. I also added a tea spoon of vanilla extract in to mine.



Tonight for dinner...

Tonight for dinner is Quick Risotto. The also call it Cheat's risotto:) Its so easy to make and it tastes sooooooo good!!!


You will need:

  • 1 and a half cups risotto rice
  • 4 cups simmering chicken stock
  • 115g mozzarella cheese cut into small cubes
  • 2 egg yolks
  • 75g cooked ham (i use bacon, you can also try to add cooked chicken) cut into small cubes
Pour your stock over rice, bring to the boil and simmer for 18-20 min. Remove the pan from the heat and quickly stir in the mozzarella, egg yolks and ham. Cover the pan and leave it to stand for 2-3 min to allow cheese to melt, then stir and serve!:)
