Tonight for dinner...

is chicken with broccoli, cauliflower and cheese. Beautiful creamy dish!



Cut chicken in to cubes and cook in the frying pan until ready. Cook your cauliflower and broccoli in the boiling water for about 5-7 minutes. In the separate pan melt 50g of butter. When melted add 50g of flour and mix them together until golden, Then slowly add 450ml of milk,cook the souse until it gets creamy. Add chicken, broccoli, cauliflower in to the souse and mix them all together. Then add the mixture in to the oven dish and cover with cheese. bake for about 10-15 min and enjoy!:)

Tonight for dinner...

one of my all time favourite things to eat is smoked salmon, so tonight for dinner is smoked salmon with big green salad on the side and few pita bread crisps. So healthy and easy to put together, perfect if you are to busy to cook or just really tired:)

Pita crisps is a great snack as well, i been having them all last week for lunch with some hummus! here is how i make them: cut my pita bread in crisps-size pieces and put them on to a baking tray, sprayed with olive oil spray. Then i sprinkle some garlic salt on top (you can use any spices you like) and pop them in the oven for 7 minutes. Done! Crunchy healthy crisps:)

Happy Sunday:)

I loooove Sundays!!! (i think i already mantioned that;) My mum and her husband were visiting us(me and my husband) over the weekend and today we went for a really long walk and then we had a great meal at the local pab/restaurant. I couldn't resist a dessert, so I've ordered a waffle with bananas, ice cream and toffee. It was like a piece of heaven melting in my mouth, i just cant describe how delicious it was!!!!:) I really wasn't eating healthy this weekend, but it ok, you have to indulge now and again;) hope everyone had a great weekend, here are some photos that my mum took today. Photography is her huge hobby and i think she is really great at it!

Tonight for dinner...

Tonight for dinner is Quick Risotto. The also call it Cheat's risotto:) Its so easy to make and it tastes sooooooo good!!!


You will need:

  • 1 and a half cups risotto rice
  • 4 cups simmering chicken stock
  • 115g mozzarella cheese cut into small cubes
  • 2 egg yolks
  • 75g cooked ham (i use bacon, you can also try to add cooked chicken) cut into small cubes
Pour your stock over rice, bring to the boil and simmer for 18-20 min. Remove the pan from the heat and quickly stir in the mozzarella, egg yolks and ham. Cover the pan and leave it to stand for 2-3 min to allow cheese to melt, then stir and serve!:)

Tonight for dinner...

Tonight for dinner I made something new again: Pork in cheese:) Slice your pork in to thin pieces (or buy a ready made one, like i did), cover them in egg whites, put cheese on top and grill for 10 min. You can also fry it if you want, but I prefer to grill my meat as its healthier:) Serve with some vegetables and potatoes or rice (i served mine with fresh vegetables and brown rice).

Tonight for dinner...

Tonight I made a really healthy dinner for me and my hubby! It was Turkey burgers with spinach, some potatoes and vegetables on the side. I cooked it for the first time tonight and both me and my husband thought it was delicious:) It is very easy to make too. All you need is to mix turkey mince with spinach and egg whites, add a little bit of salt if you want, then form little burgers and grill for 10 min on each side. Done!:)
